Beachwood Pizza Honors Late Chef with Limited-Time Menu
URGENT UPDATE: Beachwood Pizza & Beer in Huntington Beach is paying tribute to the late Chef John Ash, revered as the father of Wine Country cuisine, by launching a limited-time menu inspired by his iconic cookbook. From October 23 to November 2, food lovers can indulge in three exclusive dishes that celebrate sustainable cooking and seasonal ingredients.
Chef Ash, who passed away in August at the age of 83, was a trailblazer in the culinary world, known for his commitment to local produce and the wines of Sonoma County. His influential book, “From Earth to Table,” published 30 years ago, continues to inspire chefs and home cooks alike.
Head chef Ashley Arias has crafted the new menu, including the Earth To Table Sourdough Pizza, featuring Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions. “It’s like putting a charcuterie board on a pizza,” Arias explained, highlighting the dish’s innovative approach.
The second offering is a wine-braised chicken Orecchiette, with creamy chicken, herbed Shiitake mushrooms, sun-dried tomatoes, and parmesan. “It’s super herbie, super savory,” Arias noted, emphasizing the depth of flavors.
Dessert enthusiasts will delight in the Spiced Wine Poached Pear, a dish Arias described as tender yet full of texture. “I used the wine he’s always talking about in his book, and I poached the pears in white wine,” she said, capturing the essence of Ash’s culinary philosophy.
Owner Gabriel Gordon expressed his profound respect for Ash, stating, “John was the godfather of wine country cuisine and a huge influence on me growing up in Santa Rosa.” He fondly recalled Ash as a close family friend who sparked his passion for cooking.
