Chicago Chefs Celebrate Michelin Star Recognition and Awards

In a notable recognition for Chicago’s culinary scene, chef Jake Potashnick of Feld has earned a coveted Michelin star just 16 months after opening his restaurant in the Ukrainian Village neighborhood. His dedication to creating a unique, farm-focused menu has not only ensured the restaurant’s survival through its first winter but has also garnered the attention of Michelin inspectors.

Potashnick, who has an extensive background in high-caliber kitchens across Japan, Sweden, France, and Germany, expressed his astonishment at the recognition. “I don’t think we ever cooked with a star in mind,” he stated in an interview with the Chicago Tribune. “I’m really proud of the fact that we got this recognition by breaking that formula.”

Alinea’s Shift and the Rise of Kasama

While Feld celebrated its achievement, Alinea, the renowned modernist restaurant led by chef Grant Achatz, experienced a downgrade from three stars to two. Alinea had maintained its three-star status since the Michelin Guide first arrived in Chicago in 2010. This shift highlights the competitive nature of the Michelin ratings.

In another significant development, Kasama, a Filipino bakery and restaurant owned by chefs Tim Flores and Genie Kwon, was elevated to two stars during the recent Michelin Guide ceremony. This marks a milestone for Kasama, which became the first Filipino restaurant globally to receive a Michelin star in 2022.

Kwon humorously accepted the award with a cutout of Flores’ head, as he was unable to attend the ceremony. “We never thought we would open a tasting menu restaurant,” Kwon remarked, reflecting on their journey since launching in July 2020.

Recognition for Outstanding Service

In addition to the restaurant accolades, Amy Cordell, the chief operating officer of Ever, received a special Michelin service award for her exceptional front-of-house management. Cordell described the experience as surreal and humbling, further emphasizing the meticulous detail that goes into creating memorable guest experiences.

According to the Michelin Guide, the service at Ever is so remarkable that it has been featured in the popular television show “The Bear.” Cordell noted that the filming captured the essence of their service, with the restaurant staff performing as they typically would.

As the Michelin Guide continues to shape the dining landscape, new Bib Gourmand awards were also announced for restaurants such as Mirra, Nadu, and Taqueria Chingón, alongside recommendations for others like Astor Club: Chef’s Table and Creepies.

Chicago’s culinary scene is thriving, with restaurants like Feld, Kasama, and Ever leading the charge. As the Michelin Guide expands its influence, these establishments exemplify the creativity and dedication present in modern dining.
